Transfer the sweet  potato slices to a large bowl and toss with the oil and salt. Arrange in a single layer on the cooling rack . There are a lot of means to any end, and that’s especially true of roasting sweet potatoes. You can whole-roast them in the embers of a campfire, turn them into crisp fry-like wedges, or even layer them into a vegetable bake like a tian. It only takes a few steps to make crispy roasted sweet potatoes! Be sure to prepare a baking sheet with parchment paper or aluminum foil.
Determined, I went searching for a quick and easy way to sate my burning desire for sweet potatoes that will appease my inner miser as well. The last step is to roast in the oven until the potatoes are crispy and brown around the edges. This will take about 35 minutes, more or less depending on your oven, flipping throughout to brown on all sides 地瓜酥 of the potatoes. These go well with just about any dishes and compliments both the Jewel and Garnet sweet potatoes that are available in most stores or farmer’s markets.

The time may need to be adjusted some, but in general, the process and cooking temp are the same. These are delicious and at the same time, a bit of a challenge. Like the other reviewers, I also found that these little guys are resistant to crisping up. I used Jason’s idea of broiling them after baking according to directions.

I don’t have bake time to for convection. My assumption is less time, but I can’t say for sure without tryin it. I had saved this a while back and just got around to trying it…. And will be doing it again tomorrow!
However, there are endless ways to mix and match the seasonings according to your taste and meal. Add your sweet potato fries, oil salt,  pepper and any additional seasoning to a bowl and toss to combine. With custardy insides and charred exteriors, these sweet potatoes are everything you always wish roasted sweet potatoes could be. Preheat the oven to 220 degrees C and line a large baking tray with parchment paper. If you opt for no parchment at all, be prepared to spray both the basket and the fries prior to air frying and again as you turn the fries, and as you add new batches.
